I am a 7th grade Inclusion Specialist at Douglas Intermedate Elementary School. I have been teaching for over 30 years.
I have two daughters. Andrea, who teaches 5th grade in Colorado Springs and Stephanie who is currently looking for a job in marketing and communications.

Greek Easter

Greek Easter is coming up. I wll be serving, feta, olives, grape leaves, Roast leg of lamb, broiled assparagus, roasted potatoes, spanakopita,Greek Easter Bread, baklava and koulourakia (easter cookies). And so much more. Xristos Anesti (Christ has risen)

Greek Salad

You haven't had salad until you've had a Greek salad. A mixture of romaine lettuce, cucumber, tomato, red onion, olives and the feta cheese. Tossed with a dressing made with lemon juice, olive oil, basil, salt and pepper. A loaf of bread and you're good to go.
             

Baklava

      This is one of my favorite desserts. Made with chopped walnuts, almonds, sugar, cinnamon, sugar and honey. Soooooooo good with a cup of coffee or tea. Also at Greek Festivals across New England they serve Baklava ice cream sundaes.
